I had an oil temp sender that screws into the stock pressure sensor hole. I ran just that in the hole for a while just to see what my temps were before I installed my T fitting for both senders. Drove it twice, then went to take it out to install the T and found it had nicely exploded inside the case and almost completely pluged my oil gallery. For full synthetic motor oil, maximum can exceed 300 degrees. In all cases, less than 212 will cause water buildup in the crankcase. See this link for more

I think an oil temp gauge is pretty important and wouldn't be without one on my 03 S. You will be surprised how long it takes the oil to properly warm through, a good 15-20 minutes until it reaches 80 deg f, thats with the sensor fitted in the sump plug.
